You could make many excursions, for example to breathtaking Olüdeniz where you can do paragliding; Saklikent where you can cool off from the tropical heat in the ice cold water and go rafting; Thlos and its ruins; Dalyan, famous for its mud baths and tortoises (also a good place to go fishing). Excursions of several days to Ephesus/Pamukkale and even Rhodes are definitely worth it. The water sports enthusiasts will find all they need here: windsurfing, sailing, (deep sea) fishing, diving, etc.
